The sun is shining, restaurant patios are filled with outdoor diners, and for the first time in months, salad actually sounds good. Let’s be real, winter salads are more of an afterthought once we’ve realized our pasta dish and garlic knots could use a side of something more nutritious. Come spring, the seasonal options seem limitless and lighter meals are our jam.
