The Only Three Black Bean Recipes You’ll Need This Summer

I love summer and the easy food that can be consumed all the time during various outings. Whether I bring my lunch to work to save cash or need to bring a side to a BBQ, my instant go-to is some form of black bean salad. Not only is this protein-oriented bean pretty laid back in its flavor, but there are infinite possibilities. I’m serious. 

Usually one can of black beans along with the other ingredients will last me through the week for lunch (#mealprep). These recipes can vary in quantity, so you can eyeball what portions you would like. Here are my top three for the summer.

1. The Old Reliable

Mix together…

  • one 15oz can Goya black beans
  • one 15oz can of chick peas
  • one diced pear
  • 1/2 cup blueberries
  • handful of pomegranate seeds
  • 2 tbsp goat cheese
  • 8 oz almonds, crushed
  • drizzle of balsamic dressing

2. Black Bean Salsa

Mix together…

  • one 15oz can of black beans
  • one 15oz can of unsalted corn
  • 2 cups sabra mango salsa
  • 1 cup verde salsa
  • 1 diced red bell pepper
  • 1/3 cup black olives
  • 1 chopped avocado
  • 1/2 cup shredded sharp cheddar cheese

3. Get Your Greek On

Mix together…

  • one 15oz can of black beans (are you sensing a pattern?)
  • one 15oz can chickpeas
  • 1/3 cup black olives
  • 1 red onion, diced
  • 1/2 diced cucumber
  • 1/2 cup feta cheese
