7 Fall Recipes That Don’t Include Pumpkin

Now that fall has officially begun, we can fully embrace the season of gourds, leaves, cooler weather and, of course, pumpkin! However, with the saturation of pumpkin into ABSOLUTELY everything (seriously, they have pumpkin spice Pringles, something absolutely no one was wishing for), it’s nice to branch out into other fall-themed recipes.

Here are seven recipes that celebrate fall’s best produce without featuring pumpkin.

1. Slow Cooker Butternut Squash Lasagna

Butternut squash is pumpkin’s more refined, sweeter cousin and this lasagna uses the squash in place of the noodles for a unique spin. As an added bonus, it cooks in your crock pot, so less mess and time!

2. Acorn Squash with Kale and Sausage

Stuffed acorn squash make Instagram-worthy dinners and are incredibly filling and healthy. Kale makes this one even better for you.

3. Spaghetti Squash Sausage Lasagna Boats

Spaghetti squash is every pasta lover’s dream, as the stringy insides resemble spaghetti strands and provide a noodle replacement that is healthy and low in calories. This recipe provides all of the comfort of a hearty slice of lasagna without making you feel sluggish.

4. Mom’s Apple Crisp

Wondering what to do with all of those apples you picked this fall? Why not whip up this decadent (and simple!) apple crisp! The dish highlights the tartness of peak season apples with a heavenly crust.

5. Sweet and Savory Warm Apple Onion Relish

This is one unique take on relish, combining apples and onions. Perfect for a chilly day and great on top of chicken apple sausages.

6. Apple Cider Donuts

For those with mad baking skills (or who love donuts!), this recipe couldn’t be more fall af. Pair with coffee or hot apple cider for a double dose of delicious.

7. Sparkling White Cranberry Sangria

I usually love drinking sangria in the summer, but this light and refreshing recipe is perfect for the early days of fall! It’s made with white cranberry juice so it is also white-couch friendly (which is important, trust me).
