A few weeks ago, I set out to create a healthy banana oat breakfast bar. After much trial and error, I discovered the perfect combination of ingredients that satisfy my sweet tooth and keep me full all morning long. Here are the directions to the final recipe I make almost every morning (serves 1 to 2):
- Preheat oven to 375
- Melt 1 tablespoon coconut oil
- Add 1 mashed ripe banana
- Mix in 1/2 cup of oats
- Add 1/4 cup of chopped walnuts
- Stir in (optional) 1/4 cup raisins –or– 1/8 c mini choc chips
- Add 1/4 teaspoon vanilla
- Sprinkle in 1/4 teaspoon cinnamon
- Pat out in flat bar form on parchment covered middle of baking sheet
- Slide the pan in the oven and bake 8 to 10 minutes
