I’d only made it through a third of the documentary, What The Health, last month before making up my mind. I was ready to make the transition from vegetarian to vegan. Or should I say, 90% vegan, because an all-or-nothing mindset and ultra-strict lifestyle has rarely worked for me.
I rummaged through our cupboards and fridge, taking stock of what we had on hand that would work within my new plan, and which items I’d need to say sayōnara to – like beloved mac & cheese (goodbye my love)!
This wasn’t my first ‘gone vegan’ experience. After reading Alicia Silverstone’s book, The Kind Diet, back in 2011, I was successfully vegan for at least 36 hours. Although, who can really blame me for such a short-lived commitment? I wasn’t even aware of the existence of the wonderful world of Pinterest and didn’t yet have a smart phone that could google things like “are Oreos vegan?” at that point in time.
Now enlisting the support of apps and blogs full of delicious recipes, I’m better equipped to eat mostly vegan without feeling deprived. Here are 5 of the upcoming meals on my menu:

That movie totally changed my life too- saw it last month- haven’t eaten meat since & totally struggling with even looking at cheese!
